Chicken Noodle Soup

This soup turned out SO delicious!  Rachel was impressed, I was impressed, what more is there to say?  Are you sick?  Someone you know?  Do you have a craving for a week’s worth of meals done in one batch?  Do you have a big gathering of family?  You have come to the right place then!  If you have a craving for some rustic, flavorful homemade chicken soup then you’ve found it.  Get your grocery list out and take note!

The broth recipe can be found on my recent post and I insist that you make the broth from scratch.  I think it will make all the difference.  I think the meat from the slow-cooked broth also helps to make the soup a success.  I wish it was summer again and I had my garden with fresh herbs.  I think fresh herbs would have taken this soup a notch higher.  As it is though I cannot complain one bit!  Let’s get started:

Chicken Noodle Soup Boiling


  • 8 cups of homemade chicken broth 
  • Chicken meat leftover from broth
  • 1 teaspoon dried thyme
  • 3 large carrots, cubed
  • 3-5 large celery stalks cubed
  • 1 large onion, cut into wide slices, then halved
  • 1 handful fresh parsley
  • Sea Salt and Freshly ground pepper
  • 3 cups or so of wide egg noodles


  1. Heat large pot over medium heat
  2. Saute onions until just about soft
  3. Saute carrots and celery
  4. Add broth and bring to a boil
  5. Reduce to a simmer and simmer until carrots are almost soft
  6. Add spices, chicken pieces and noodles
  7. Heat until noodles are al dente (just done)
  8. Taste and re-season (add slightly more salt if needed)

    I didn’t know you had a blog! This must be the soup you made for us when Linnea was born, and I’ve been meaning to ask for the recipe! So yummy!

    Cara, I’m glad you found the recipe. This chicken noodle soup was SOOO good! 😀 You should also check out the chicken pot pie recipe. It is AMAZING!

    I so wanted to eat soup.. it looks so yummy…. I think next time you come over to the house you need to bring a bowl of this yummy soup with you.

    Thanks Keith! I cooked up the chicken from butcher day for this soup. I was really good! I think the 20 degree weather helped make it even more yummy!
