Kris - The cake may not be as tall and light and airy as it would be in a stickier pan. I'd say try it! I doubt it will be a disaster. if it doesn't come out as pretty and airy as you wanted, you could always break it up into pieces and mix it with custard/pudding/whipped cream and fruit to make something like a trifle.

Thank you for this! I really wanted to make angel food cake since I have leftover egg whites in a carton and I didn't have the pan Alton had. I was going to buy it, but it was almost $15 at one store I looked at. I'm going to use my silicon loaf pan - would that be alright?

Hey Mike,

Thanks for the tips. We used the exact same recipe and had the same thing happen at the 30 minute mark! However, we did bake it the full 35 and we were using the recommended pan. In that last five minutes of baking--it lost like an inch of height. I'd gotten the cutting boards out per your idea, but didn't need to use them, as once I had it out of the oven it shrank back down to be level with the top of the pan. Still, was great to have a backup if that had not been the case. Thanks for documenting your experience!
