I was hunting around for cookie recipes today that included oranges (and coriander since it’s a favorite of mine and often overlooked). I found this one and gave it a try, instead of a full conversion from orange-poppyseed to lemon-coriander, I only went half way. Mmm! It was delicious, but I’m tellin’ ya it totally reminded me of fruity pebbles cereal! Good stuff! I want to try it with more fruits!

I make a lemon cookie with coriander AND poppyseed. It’s a favorite at my house with adults and kids. YUM!

I did this recipe and added coconut milk and some lemon juice to make awesome lemon coriander cupcakes. Should give it a try!
